Food post! Tuesday dinner: Carne Asada, mashed cauliflower, and turkey-wrapped asperagus. All these recipes were from the Paleo Diet Cookbook by Loren Cardain PhD. There were only minor substitutions/adjustments involved; the carne asada called for lime juice (I used lemon instead), the mashed cauliflower (from a recipe called “Carb-Lover’s Cauliflower”) called for fresh chives (I had none, so I used dried instead), and the turkey-wrapped asperagus called for wrapping each asperagus spear in a slice of turkey, but I decided to go three/four per slice instead. All-in-all a fine meal, though I wish the mashed cauliflower had been a little thicker… it was slightly thinner than I wanted it. Another ten minutes of cooking it down may have helped thicken it up some, but maybe that’s for next time.
